Align docs with Windows beta and Linux work branch

What changed

• Replaced stale Linux package and GUI claims with the v0.1.0 Windows release scope and a link to the unfinished Linux runtime branch.
• Rewrote STATUS around tested behavior and remaining limits, including the BlackShark V2, USB sound card, and Seiren V3 Mini hardware tests.
• Tightened contributor and technical docs, removed unsupported safety and compatibility absolutes, and corrected the bundled updater help and third-party notice for prebuilt Windows assets.
• Kept the README's voice; changed release facts and one overbroad device-adoption claim.

Verification

• .\validate.ps1 -Locked on Windows: all quick gates green.
• git diff --check: clean.
• Checked local targets of relative links in edited Markdown: all resolve.
• Documentation only; no device behavior changed or hardware tests needed for this patch.
