Add NodeJS 26 and only build maintained versions in the main workflow - #412

- Add Node 26 images; corepack is installed with npm since NodeJS no longer bundles it from v25 - Node 20 images (end of life since 2026-04-30) are only built for legacy PHP versions (8.1, 8.0, 7.4), by the legacy workflow - Remove PHP 8.1 from the main workflow (still available in the legacy workflow) Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
