Low risk documentation-only change that adds new Redis Software 8.x UI/REST configuration guidance and re-organizes existing pre-8.x instructions.

Overview
Updates the Query Performance Factor docs to split guidance by Redis Software version, highlighting a new simplified configuration flow in Redis Software 8.x+ (UI dropdown + query_performance_factor REST field) that applies immediately without shard restarts.

Relegates the previous manual parameter-based setup (sched_policy, conns, WORKERS) and shard-restart procedure to a “prior to 8.x” section, and refreshes prerequisites plus adds new UI screenshots and REST API examples for 8.x.
