chore: pin HippoRAG + graphiti fork to SHAs (were floating) - #37

…SHAs Both floated: HippoRAG had no ref, graphiti-core tracked the fork branch redevops/g1-source-hydration. Pin the commits they resolve to today (HippoRAG @ea601818, graphiti @053af50b) — behavior-preserving, immutable. Neither publishes a release tag. Part of the org dep-pin audit.
