get_account_data_as can no longer be used with MappingAccount because it's too large to fit on the stack, so I had to refactor this.

After upgrading the program, other instructions using the mapping account will fail until the mapping account is resized.
Because of solana limitations, multiple transactions will be needed to resize the account.
