chore(dependencies): revert bson/mongodb upgrades because they break compatibility with MongoDB 4.2 - #907

Keeps the other 21 dependency updates from #896, but restores the previous version ranges for bson and mongodb so downstream consumers keep their existing resolution flexibility.
These ranges are managed manually so downstream packages keep their resolution flexibility; dependabot should not open PRs narrowing them.
