Removed a reference to the ModelContextProtocol.AspNetCore package README for configuration options.
@jeffhandley This is a follow up to #1388 which caused a link breakage to be reported here. I tried to find a replacement link, but couldn't find one. I'm not sure the new PACKAGE.md is a real replacement for the old README.md's. Overall, it feels like a downgrade to me, but regardless we should at least remove the dead link.
