Rewrites SELF_HOSTED.md to be cleaner and less cluttered.\n\n- Cut from 307 lines to ~115 lines (60 ins / 224 del)\n- Two clean, independent deployment paths: Docker Compose and standalone binary\n- Dropped redundant output blocks, admonition overload, and conflicting mixed instructions\n- Security and troubleshooting kept but trimmed to essentials\n\nCloses #111
