fix: publish images to the graphprotocol registry - #696

The repository moved from the edgeandnode organisation to graphprotocol, but the image build still pushed to the old registry path, which the workflow token can no longer write to, so every main-branch build since the move has failed at the push step and no release image exists.

This PR points the image build, the example deployment and docker-compose at
ghcr.io/graphprotocolinstead ofghcr.io/edgeandnode, following the repository's move between organisations.
