This PR marks all plugins as ready for Filament V5.
There also was a inconsistency between how plugins reported their "selectable dropdown version" on the docs. For now I decided to make the dropdown the actual version of the plugin, and the latest one then defaulting of course to the current Filament version. This way people will be able to see quickly what version they have installed instead of a "which docs is for what version". Also all packages support v4 and v5 simultaneously, so than maintaining it double is also not so handy.
