- Added SPI-based extension points for `DoclingServeApi` using `DoclingServeApiBuilderFactory`. - Replaced `DoclingServeClientBuilderFactory` with a unified `DoclingServeApi.builder()` factory method. - Updated API and client layers to align with the new builder factory model. - Simplified documentation and examples to reflect the updated API usage. - Enhanced test coverage for SPI-based customization and factory functionality.
