Renames the published NuGet package from EventStore.Plugins to TrogonEventStore.Plugins and updates package metadata (authors, URLs, description, copyright, tags) to reflect Straw Hat / TrogonStack ownership instead of Event Store Ltd.

The release workflow now pushes TrogonEventStore.Plugins.{version}.nupkg so CI matches the new PackageId.
