Aded most of the backend documentation (missing error codes), and Technology stack (might be missing stuff). Not sure how to do the rest of it ngl
… (besides the new routes), don't know what I'm doing with API documentation, setup and deployment not finished

looks good so far. we can leave this pr open until we figure out deployment. once we do, we can add the deployment section and merge it 🫡
