native-stack invokes `options.header` as a plain function inside SceneView's
render, so Header's hooks were registered on SceneView. NewServerView hides
the header with setOptions({ headerShown: false }) after mount on a fresh
install, so once #7432 wrapped it with defaultHeader the second render had
fewer hooks and React threw "Rendered fewer hooks than expected". The blank
first screen made every Maestro flow fail at the launch helper's
"Add workspace" assertion on both platforms.
