feat(insomnia): Documents merge into collections

Description

This PR updates a major change in Insomnia, where Documents are merged into Collections and named specs. Most changes have been done by Claude, closely monitored by me, and verified against the Insomnia source code. Changes are the following:

Regerences and how-tos

• Removed the documents page
• Folded specs into API Collections
• Renamed the design-document how-tos with redirects

Metadata, templates

• Updated terminology, faqs, and ui steps across the insomnia reference and landing pages
• Rewrote the insomnia prereq includes for API Collections
• Retired the insomnia-documents tag and corrected the ui strings

Legacy unit tests

• Gated the legacy unit test how-tos behind the new setting, pointing people at scripts
