docs: explain source-aware AI log analysis and log context settings

Summary

Document source-aware AI log analysis and per-provider log context settings, proposed in Dokploy/dokploy#5352.

Companion implementation: Dokploy/dokploy#5353.

• Explain deployment and runtime log analysis and fetching recent logs independently of viewer filters.
• Document the source-inspection opt-in (off by default) and log-line limit (200 by default; 1–10,000).
• Explain read-only source tools, file citations, available-checkout revision limitations, and remote/preview checkouts.
• Describe provider data sharing, excluded files, bounded investigation, and log-only fallbacks.

Validation

• Checked the documentation against the implementation and locally verified settings/runtime/deployment flows.
• git diff --check passes.
• Documentation-only change; the website production build was not run.

Please merge alongside or after the corresponding Dokploy implementation, not before the feature is available.
