This one needs to move together with the AG-UI packages, so it's best not to merge it by itself.

The update gives the repo its own copy of rxjs 7.8.2. The @ag-ui/client version we use still brings in rxjs 7.8.1. That leaves two copies of rxjs installed side by side. TypeScript treats the Observable type from each copy as a different type, so our agents in apps/server/src/engine/ no longer match the AbstractAgent base class, and the type check fails.

The simplest path is to include this bump in the @ag-ui/* and @copilotkit/* upgrade that #162 is waiting on, so everything lands on the same rxjs at once. Pinning rxjs through a pnpm override would also work if we'd rather keep them separate.
