Clean up styles

These docs have mixed css and inline styles.

It's confusing and hard to use.

A homogenous approach to styling should be undertaken

Want to fork the #docs-v2-preview branch and have a crack?

The pages are in the v2 folder currently.

Mintlify has some.. quirks & limitations, but whatever you can do to help homogenise it would be amazingly appreciated!

I’ll work from the docs-v2-preview branch and focus on cleaning up styles in the v2 folder.
