Upgrade to Drupal 11

The existing example uses Drupal 10, however Drupal 11 would be ideal for new projects to save time.

We have https://github.com/lagoon-examples/drupalnext-base where we are tracking D11.

There were a couple of issues with widespread support, hence the D10 continuation in the examples:

• D10 is still actively supported until D12/2026 - which lends more to a dual-example setup.
• There is a hard requirement on MySQL8 - this has now been mitigated in the example, but took time to consider.
• Not all modules are D11 compatible
