Rewrite "Etherlink EVM" to "EVM interface" when possible

The legacy pages (from the old Etherlink docs) weren't reconciled with the new narrative: "Etherlink EVM" remains in 41 inherited files next to new pages saying "the EVM interface" — fine as a tracked follow-up sweep.)

"EVM (interface)" and "Etherlink EVM" are used in distinct contexts: the former is used when we're inside Etherlink and there is no ambiguity, while the latter is used when viewing the Etherlink EVM interface from the outside. For example:

That said, I agree that in pages under evm/developing/ many uses of "Etherlink EVM" could be shortened to "EVM" or rephrased to "EVM interface", but that's more a redundant qualifier than an error, IMO.
