Document how to use the Five Safes RO-Crate profile with the validation service

For now I would be happy for this to be documented in the README or in a new file in docs/.

In the longer run it should live wherever the rest of the service documentation lives (have we decided on a home for it @alexhambley ?)

I just spotted that there is some brief documentation in the README - it's a good start but could be a bit clearer to people who don't know much about profiles.

I think we need to link from there to a short guide that explains what a validator profile is, explains why you'd want to replace the defaults, and then walks through fetching the profiles from the repo and configuring them for use in this service

Okay - I'll create some documentation adjacent to this code, which is github pages hosted, and of the style (https://health-informatics-uon.github.io/lettuce/)

I've set up a skeleton website, and a check action build (website deployment isn't setup yet).

@EttoreM will take over the populating of these pages with helpful content.
