Bug Description

When a client running Minecraft 1.21.4 or below joins a server running Minecraft 1.21.5 or above, the Frog entity's color is incorrectly displayed for the connecting lower-version client.

Steps to Reproduce

1. Set up a server running Minecraft 1.21.5~1.21.10
2. Join the server using a client running a lower version, such as 1.21.4, 1.20.6, or 1.19.4.
3. Spawn a Frog entity (e.g., a Temperate, Warm, or Cold Frog) or locate naturally spawned Frogs.

Frogs and cats are rendering with incorrect variants. This seems to be caused by the new registry changes. Additionally, the saddles on Pigs and Striders are missing. (1.21.5->1.21.4)
