[PWGLF] Refine MC handling and expand QA

- Add INEL>0 event selection for data and MC
- Use ResoMC collision joins and pass MC FT0M centrality into histogram filling
- Expand QA: event/track cutflow, track-stage, PID, and pair-level histograms
